Grilled Chicken Salad with Strawberries and Spinach is all I’ve been craving now that Spring is in full bloom! I made this with creamy goat cheese and a white balsamic dressing, but this would also be great with Feta cheese and if you want to add more protein, or skip the cheese altogether, add walnuts or slivered almonds.

🍓🥗STRAWBERRY CHICKEN SALAD
Ingredients:
- 16 oz. chicken breast
- 1 apple sliced
- 3 strawberries, sliced
- 12 almonds, chopped
- 2 cups spinach
- 1 cup iceberg lettuce
For the dressing:
- 3 tbsp golden balsamic vinegar
- 3 tbsp extra virgin olive oil
- 1 tbsp chopped shallots
- 1 teaspoon honey
- 1 teaspoon water
- 1/8 teaspoon kosher salt
- fresh black pepper, to taste
INSTRUCTIONS:
1. Heat skillet to medium-high heat.
2. Spray pan with nonstick spray. Cut chicken into cubes. Add chicken to pan and cook chicken until no longer pink on the inside.
3. Assemble salad with lettuce first, then chicken, then apples and strawberries. Top with fresh ground pepper.
In a small bowl whisk together the dressing ingredients. Pour over salad.
